BASIC FOOD GROUPS: There are only 3 basic food groups that we get our calories from:

Fat: Fats breaks down to essential fatty acids and glycerol. Bile is essential for fat absorption. Fat absorption is slow so keeps stomach feeling full longer so tendency to eat less. There is no change in blood sugar levels with eating fats which does not stimulate insulin release. Even though fats have more calories (9 calories), it is NOT the primary reason for obesity. In other words, eating fats does not make you FAT!

Protein: Proteins breaks down slowly in stomach to amino acids. Proteins keep stomach full also so tendency to eat less. There is mild increase in blood sugar levels with protein which does mild insulin release, but lot less than carb.

Carbohydrates (Carb): Carbs consist of sugar (simple carb), starch (complex carb) and fiber. All starches are long chain of sugars and break down quite rapidly in stomach to simple sugars (like glucose, galactose, and fructose). Sugars are relatively quickly absorbed emptying the stomach and causing feeling of hunger sooner. Absorbed sugars increase blood sugar levels rapidly, which results in rapid and large release of insulin (from pancreas).

Insulin is responsible for driving glucose into cells for storage or energy production. Insulin brings the blood sugar level down but depending on how high the blood sugar was, frequently will lower the sugar level too much causing symptoms of hypoglycemia (fatigue, hunger, weakness, headache, sugar craving etc).

This yo-yo fluctuations in blood sugar levels results in marked change in energy levels and sugar cravings. This results in tendency to keep eating more carbs to reverse the symptoms repeating the vicious circle. Fiber does not count as it has no calories.

BODY COMPOSITION: What are we made of?

Water 60-74%. We need to drink at least a gallon of water a day to replenish our water stores in body.

Protein & Fat. This is what the body is made of. For an average adult woman, the healthy range of body fat is 21 – 32 % and for men 8-19 %. There are two types of body fat: Essential fat and storage fat (triglycerides). Essential fat is necessary for normal, healthy functioning and is found in your bone marrow, organs, brain, nervous system and muscles. Storage fat is accumulated primarily beneath the skin and around organs and is used as storage of excess calories.

Minerals especially Calcium ~3-5% in bones.

Carbohydrates (Carb). The smallest component of our body. The body uses certain amount of sugar/carb for daily energy needs. We estimate we need ~135 grams or less of carb a day for our basic energy needs. The average American eats 251 grams of carb a day. The stored carb in our body is only 2000 calories or 2 days supply of glycogen in liver and muscle. The excess carb consumed daily converts glycerol with 3 fatty acids to form Triglycerides or stored fat.

We need to mirror our diet with our body’s composition. So Dr. Atkin’s low carbohydrate, high fat high protein diet makes most sense in view of our body composition, as well as reducing insulin levels and thereby, inflammation.
